In this course, students will not only learn how to select the right ingredients, understand the science of gelation, and master the basic operations of gummy making machines, but they will also gain hands-on experience with each step of the process. Through practical experiments, students will create their first batch of gummies, focusing on the fundamental techniques of mixing, setting, and molding. They will also be introduced to the importance of flavor and color selection, ensuring their creations are both visually appealing and deliciously flavored.

You will feel comfortable with identifying the root cause of the majority of gummy defects. You will understand how to build out a preventative maintenance program for a range of gummy machines. You will have a strong understanding of gummy machine set up and calibration.

Completion of SDU’s gummies 301 class or 3 years of gummy manufacturing experience.

3 days in Pittsburgh, PA

SDU’s master class is for those who are looking to become gummy production experts. Students will participate in engaging projects involving multi-flavored gummies, intricate shapes, and layered designs while learning about the latest innovations in gummy technology. This class gives students the opportunity to experiment with novel ingredients, such as nutraceuticals and alternative sweeteners, allowing for the production of specialized gummy products to niche markets.

Course Outcomes:

You will be able to lead a team of engineers and operators in the maintenance, set-up, and repair of gummy production machinery. You will be able to identify and do a root cause analysis on all gummy production issues. You will have a strong understanding of how to set up a gummy production facility to achieve maximum efficiency.

Completion of SDU’s gummies 302 class or 5 years of gummy machine maintenance experience.
